Date Energy Balls
Ingredients
- 1 cup Medjool Dates - (note 1) about 12-14 pitted medjool dates
- ⅔ cup Rolled Oats - (note 2)
- ⅓ cup Almonds - (note 3)
Optional flavors ideas
- 1 teaspoon Vanilla Extract
- ½ teaspoon Cinnamon
- 1 pinch Salt
Instructions
- Place the Medjool dates in a bowl and cover with water. Place a lid on top of the bowl. Set aside 5 minutes.
- Drain the pitted Medjool dates over a sieve. Press them gently in your hand to remove any water. Place them into the bowl of a food processor with the S-blade attachment.
- Add the almonds, oats, and any of the optional ingredients for extra flavors.
- Blend at high speed until it comes together into a sticky dough – it usually takes about 1 minute.
- Stop the food processor, scoop out 1 tablespoon of dough, and roll the dough in your hand to form a ball. If your batter is a bit dry or doesn't stick well, blend the batch again before rolling and add 1 teaspoon of water into the bowl of the food processor, blend again to combine, and then form balls.
- Roll into 9 date balls.

Let me share a few more tips for a perfect energy balls.
- Date Softening – Soaking the Medjool dates for 5 minutes is a crucial step. This softens them, making them easier to blend into a smooth, sticky dough, especially if your dates are a bit dry.
- Dough Consistency Check – After blending, your dough should be sticky enough to hold together when pressed, but not overly wet. If it’s too dry and crumbly, add a teaspoon of water and blend again until it reaches the right consistency for rolling.
- Flavor – This base recipe is super versatile! Feel free to pulse in different optional add-ins like mini chocolate chips, shredded coconut, or sesame seeds to create a variety of flavors and textures.
- Sweetness Adjustment – If you find your energy balls aren’t sweet enough after blending, you can always add 1 to 2 tablespoons of maple syrup to the food processor. If you do this, add a little extra oats to help absorb the added liquid and maintain the dough’s consistency.
- Spice It Up – Beyond vanilla and cinnamon, consider other warm spices like pumpkin pie spice or ground ginger for different flavor profiles, especially around the holidays.

Can I use ready made paste of dates now available in market?
Probably but it’s hard to tell how much you need, the volume of the paste won’t be the same as the volume of dates. I would rather work in weight. If the batter is too wet you can always adjust it adding more dry ingredients.

can you use a blender instead of a food processor?
It will be messy in a blender, because the jug is so narrow, it will be difficult to blend and form.
