In a bowl, combine the peanut butter with melted coconut oil, maple syrup, and vanilla.
Use a wooden spoon to stir the ingredients until a smooth consistency is reached.
When the mixture is smooth, stir in the unsweetened cocoa powder to form a smooth chocolate paste.
Add to the rocky road chocolate all the filling ingredients: nuts, popcorn, dried fruits, etc.
Transfer the Vegan Rocky Road mixture to a 9-inch x 6-inch pan or tray layed with parchment paper.
Freeze the Vegan Rocky Road in the pan for 10 minutes to fully set the chocolate batter.
Cut the Rocky Road into 16 bars. You can store them in the fridge for up to5 days.
