SPINACH BANANA MUFFINS

INGREDIENTS

▢ ½ cup Almond Milk ▢ 1 tsp Lemon Juice ▢ ¼ cup Melted Coconut Oil ▢ ¼ cup Maple Syrup ▢ 2 tsp Vanilla Extract ▢ 2.5 oz Spinach ▢ 1 cup Mashed Bananas ▢ 2 cups Instant Rolled Oats ▢ 2 tsp Baking Powder ▢ ½ tsp Baking Soda ▢ ¼ tsp Salt

Combine Ingredients

Place all the ingredients in the jug of a high-speed blender, follow the order listed in the recipe card above.

Blend Ingredients

Blend on high speed to form a thick green batter.  Stop when the batter is smooth. Rest it for 5 minutes in the jug to thicken.

Transfer to Tray

Transfer the batter into the prepared muffin tray.

Bake

Bake for 15-18 minutes in an oven preheated to 340°F (170°C).

Cool Down

Cool down on a cooling rack.
